Modern Peruvian Cuisine
Peruvian cuisine, considered among the best in the world, inherited its innovation, mix, and flavors from Peru’s history. Its culinary fusion developed over a long process of cultural exchange between the Spanish, Africans, Chinese, Japanese, and Italians, among others. The dishes became more and more varied as races mixed and migrants landed at the port of Callao.
Our latest menu pays tribute to the diverse cultures in modern-day Peru. We chose to focus on the Japanese heritage in Peru and created a unique dining experience that is a fusion of Peruvian & Japanese cuisine. The culinary vision behind our new menu was a true collaboration of like-mindedness created by the friendship & the extensive experience of our own Chef Julio Cancho.
The Nikkei Experience
Is a 10-course dining adventure featuring small plates of Peruvian-Japanese fusion. Reservations are required.
Our Owners
Julio Cancho - HEAD CHEF/ OWNER
Born and raised in Lima, Peru; Chef Cancho started working in kitchens doing prep work after school. From a young age; he was determined to become either a United States Marine or a Chef. After he moved to Connecticut he began working in entry-level kitchen positions and worked his way up by studying alongside culinary experts.

He became an apprentice chef and honed his culinary skills. Through the apprenticeship and his own studies, he finally made his way to Chef status at J Restaurant & Bar.
Today his passion is to use his extensive culinary background to present delicious Peruvian cuisine to his guests at Canggio Restaurant.
Jose Cancho - RESTAURANT OWNER
A native of Peru, Jose started out with a degree in Computer Programming. Upon relocating to Connecticut he adopted the entrepreneurial spirit and began his photo and videography business. With that success, he is realizing his dream of opening a restaurant, "it's a bigger challenge", but he is ready to see it through to the end and create another success story.
Cesar Viggio - RESTAURANT OWNER
A career Marine and owner of two small shops in Lima, Cesar brings strategy, discipline, and solid ownership skills to the Canggio team. Making Canggio Restaurant a hit is his top priority and he welcomes people to sample the fine foods of his country. As an amateur mixologist, he has provided the recipes for our best pisco cocktails.
